i just kinda learned this myself, take the pic you want to cut something out of, double click the thumbnail(or creat a new layer) then go to the paths tab(where the thumbnail is)then create a new path(on bottom of same area). Then select the pen tool to start outlining the object you want to cut out, all the way til you reconect then you can start another area if you need another part or for cuttin out spaces like when a chick has her hand on her waist and ya need to cut out whats in background between her arm. lots of zooming and shit but when your done use the Make selection and feather it out like 1 pixel. then go back to the layers tab and add a mask(on bottom of thumbnail area) and then it should be done youll have your cutout, hope this helps its how i do it in CS2 anyway, not sure if the buttons are in the same place for you.

best way to learn photoshop is to use a photoshop tutor then play around with it

Was it bad instructions? I said i barely learned to do it myself...so if i goofed on a step I apolagize, kinda know now better that the smaller the pic you might wanna use less feather...sorry if that walk through kinda sucked. any questions ill try to answer though
